This recipe is simple but delicious and tastes like sweet potato pie with blueberry ice cream blended in! Believe me, it makes a tasty ice cream. Serves 2.
Ingredients:
1 Hannah yam or Japanese sweet potato roasted, then peeled, and frozen
2 Ripe Bananas peeled then frozen
1 Cup Frozen Blueberries
1/2 teaspoon Cinnamon
1/4 teaspoon Nutmeg
1/8–1/4 Light Culinary Coconut Milk (optional) or more depending on how soft you want the ice cream to be.
Directions:
Add all ingredients to the Vitamix or other high-powered blender. Unscrew the clear middle part of the lid and put the taper/baton inside. Turn the blender on high and mix all the ingredients with the taper until blended smoothly. For those who want extra sweetness, add 2 to 4 dates. But it really is sweet without dates. Enjoy!
